Produced by winemaker, William Downie. In 2006 William was fortunate to buy a farm and plant a vineyard in Gippsland, just 20 minutes from where he grew up. The land is north facing, surprisingly the opposite of the usual hot Aussie weather, as the climate here is cool with high rainfall. You can even spot a ski resort in the distance! William farms with regenerative agriculture in mind, which means no cultivation, no synthetic chemicals or fertilisers.
Bull Swamp is one of four Pinot Noir's produced by William. This one specifically sits at 150m altitude, on red volcanic soils. He describes the soils as high in iron and free draining, bringing forth the floral, spice and iron blood characters in the wine. Grapes are hand harvested, de-stemmed and softly pressed. Fermented with natural yeasts in a mix of wooden and stainless steel open fermenters. Finally, aged on the lees for ten months in French and acacia barriques. This Pinot Noir is earthy on the nose, with berry fruits on the palate. Expect a delightful hit of sweet woody spice!
