Dani and Adam Davies make exceptional cider and perry in their small shed on the Welsh borders. Using organic methods in the orchards and minimal intervention techniques more commonly found in the kind of wines we love rather than ciders, for example fermenting using the naturally occurring yeasts and avoiding any additions, fining or filtration, these are exceptional drinks and a true expression of the unique terroir of the Marches.
