Cerasuolo translates as 'pale cherry red' and this colour is acheived with a short maceration of 24 hours or less. Not quite your pale provence style rosé... the Cerasuolo is brightly flavoured with an intense, tannic character and great acidity making it a perfect companion for food: from cured meats, to pomegranate salad, and even east asian cuisine.
