Exciting stuff from Daniel and Nicola Ham, pushing the potential for zero-sulphur English wine! Based out of their cellar in Wiltshire that began as Dan's side project from heading up wine-making at Langham Wine Estate in Dorset, it's now grown into a full family affair. They source their grapes from responsible, passionate growers from across Southern England and are making wines with utmost care in tiny volumes.
Cascade is a blend of 7 different varieties taken from different plots scattered across the south of England. Each variety, handpicked, foot trodden and left on the skins between 2-10 days before further fermentation in a combination of amphora and old Burgundy barrels. After 9 months on the lees, all varieties are blended for a week in a stainless steel tank before being bottled with no addition of sulphur.
Beautifully saline and savoury with underlying vibrant stone fruit
Perfect for sipping on a sunny day, and if you feel inclined to strain your eyes feel free to be calmed by the minuscule mantras enscribed into the label.
