GlouGlou is taking you to nature for the monthly spotlight in May, focusing on Natura - all things organic, foraged, local and in season. For our Supper Club this month the Glou crew will be foraging for produce in local forests and fields. What we can't find will come from two wonderful local producers, Wackley and Linley farms.
Linley Farm is an organic biodynamic no dig vegetable and flower garden based in South Shropshire - "Producing food that is good for nature, good for us and good for the soil". Wackley Farm, in Burlton, aims to produce sustainable, nutritious and healthy meat from animals that have been born, reared and finished in an environment that is as natural and stress-free as possible.
While Natura is about making our food as organic and sustainable as can, it's also about the wines! Think natural, low intervention, organic and biodynamic. Embrace the haze and enjoy that gorgeous sediment! Learn more about what this way of growing and making of wine means for you and planet.
This event will be one sitting, entrance at 6:30pm and food served from 7pm. If you opt for the wine flight then each course will be accompanied by a carefully matched wine pairing. Or choose your own drinks from our By the Glass Board or extensive wine and bar list.
The menu consists of (Subject to change depending on what we find/access to produce):
On Arrival: Elderflower Aperitif, Focaccia served with Appleby's Salted Butter and Green Garlic & Sage Butter
1st Course: Whipped Goats Curd with Wild Garlic & Green Garlic Butter on a bed of labneh with Harissa & Honey, glazed mixed carrots topped with sumac and miso seeds
2nd Course: Light Salad of Asian mixed leaves with blanched asparagus and mangetout, poached rainbow trout with early potatoes.
3rd Course: Slow Cooked Wackley Farm Hogget served with 3 way cooked Artichoke, salsa verde and wild garlic.
4th Course: Strawberry & Elderflower Meringue
