Mother Rock, Empire of Dirt Sauvignon Blanc, Swartland, South Africa

Sauvignon blanc grown on high altitude vines from the slopes of the Citrusdal mountainin Swartland. The grapes are handpicked and split where 10% are fermented whole bunch on the skins and the rest are foot trodden and the pressed juice ferments naturally in concrete tank. The two portions are combined and transferred to another concrete tank for around 11 months of additional ageing before being bottled without fining or filtration and just a little addition of sulphur.

Plenty of citrus with herbaceous hints and a waxy mineral edge.
