Tom Lubbe is a bit of a legend in the natural wine world. He was one of the pioneers in the South African wine revolution in the early 90's, working with the only estate championing indigenous yeasts and lower yields in South Africa (Welgemeend). He also mentored and paved the way for the next generation of natty superstars including Craig Hawkins of Testalonga and Jurgen Gouws of Intellego.
Tom moved to Rousillon to intern at Domaine Gauby and get a feel for mediterranean varieties and climate. He met his wife Nathalie here and in 2003 they set up Matassa.
The Olla Rouge is a Lively light red made from a mixture of red and white grapes. Supernaturally quaffable, wild and herbal with a slight buzz. Unfined, unfiltered and without any added sulphates. Perfect chilled down a little.
