When - 2024
How - A blend of two white heritage varieties and one red PIWI from the cool and damp 2024 vintage. Naturally reached 9.5% potential alcohol, with fermentation completed in bottle. Finished at a slightly higher pressure than previous vintages resulting in lovely, foamy bubbles. The colour is delicate pink coral and the aromas are all strawberrry, red cherry and touches of fennel. No added sulphites. Vegan.

Tim works with growers around England and Wales, on a mission to rescue the fast disappearing heritage grape varieties planted in the UK in the last century and to craft them into delicious, low intervention pét-nat using traditional winemaking methods. The Great British old vine story, seen through the technicolour prism of the German cross heritage grape varieties planted in the 1960s, 70s and 80s by eccentric amateurs.

Tim also makes wines in Australia - you may have tried Hunny Bunny and Piggy Pop, similarly exciting Pet Nats from vineyards across South Australia, made using less know grape varieties.
