How - Biodynamic, Vegan. A blend of Sangiovese, planted on north east facing slopes, with a small amount, around 15%, of Cabernet Sauvignon and Cabernet Franc from south facing vineyards overlooking the island of Elba, soils rich in schist and minerals. Spontaneous fermentation with indigenous yeasts, 10 days maceration in 30hl concrete vats followed by 12 months maturation in concrete. Unfined, unflitered and low sulphites.
I Mandorli was created in 2002 when Paola's family bought some land near the Tuscan coast near Suvereto, a small village between Bolgheri and Piombino. Paola's father enlisted the help of Andrea, a winemaker with a great depth of experience working with biodynamics at other producers, to plant vineyards and start the winery. Their location, near the sea and surrounded by natural mediterranean vegetation and cork forests, the powerful sun, as well as their respect of the soils and nature, leads to wines that have a strong mediterranean character, full of fruit but with a lovely savoury edge and lift.
