Extended Fermentation Washed Castillo produced by Alfredo Castaño — The Castaños are a powerhouse family of producers from Santuario, Colombia, who are redefining what small-scale specialty can look like. Led by Alfredo Castaño, a CQI Level 2 processor, and supported by his brothers Eunilver and Daniel, the Castaños are combining deep-rooted knowledge with forward-thinking practices across their three neighbouring farms.

Expect a beautifully expressive cup with notes of gooseberry, prunes and dry sherry — the result of meticulous processing, altitude, and varietal selection.
