Eduardo's first brush with the wine world was at home on his family's vineyards in Tenerife. Following his passion, he went on to study agricultural engineering and oenology. From there he wanted to discover new territories, recognising the importance of sharing knowledge with other producers, which led him to Sicily where he worked with another of our fave producers, Arianna Occhipinti.
In 2014 he began restoring vineyards on the north side of Etna as well as bottling his first vintage. Now with 4.5 Ha over 8 vineyards, and using 90% traditional varieties planted at different altitudes, Eduardo is certainly one to watch.
The grapes for Versante Nord are hand picked at two sites, Pietramarina and Crasa, at elevations ranging between 550 - 750 meters. The soil is sandy and rich in volcanic ash, lying over sedimentary rock. These vineyards often have a multitude of local varietals planted alongside the main grape vines which creates complex field blends.
The grapes are hand harvested and all grapes go through spontaneous fermentation in cement tanks with 5 days on the skins. Post fermentation the wine ages for 8 months in concrete and old oak Botti before being bottled without fining or filtration.
