Grown on limestone rich soils high in the hills of the Aude, close to the Spanish border in Occitane, this wine is pure, elegant and has amazing finesse. 100% Chardonnay, made without any oak ageing by local boy Gilles Azam it is perhaps not what you might expect from this part of France. The grapes come from vineyards on north facing slopes on the highest part of the domaine which maintains acidity in the grapes and freshness in the wine, and the fossil rich soils add their own particular magic. Lovely with some fish or before a meal, this is a great Chardonnay for people who don’t usually like Chardonnay!
