Domaine Jean Baptiste Senat, La Nine, Minervois, Languedoc, France
La Nine means "little one" or "sweetheart" and is an affectionate Occitane term to call a young girl. A classic rich Languedoc blend with herbal aromas and hints of spice. Great with a slow cooked lamb shoulder or grilled aubergine.
Winemaking is natural, using whole bunches, spontaneous fermentation with natural yeast, but leaves nothing to chance. Bottled unfined, unfiltered and with no added sulphites. Superbly drinkable.
Our kind of natural.
Jean-Baptiste was a student in Paris in the ‘90s but out of love with city life. But while there he did discover natural wine in the growing number of bars that focused on what at the time was a relatively new thing. He took the opportunity to meet visiting winemakers, taste widely, and to read the works of Jean Chauvet, one of the true pioneers of natural winemaking. He decided this was the kind of wine he wanted to make, returned to the land of his family, and over the ensuing years has developed and tuned his farming and winemaking to show the best of the region and the indigenous grape varieties.
Authentic. True. And naturally delicious.
