'Les Oubliés' translates to 'The forgotten ones' and refers to the ancient and forgotten vinification technique from their region of extended skin contact of altesse, a local grape variety. This wine is a chardonnay taken from a single parcel in the village of Lhuis, which is destemmed and left to ferment on its skins in tanks for over a month! It is then transferred to small barrels on its lees for nine months before bottling. Unfined and unfiltered.
