Brothers, Cyrille and Sylvaine are the fourth generation of the Pacquerau family to look after their estate in Clisson. They have nearly 55 hectares of vines of which half are dedicated to growing Melon de Bourgogne with the rest split between 14 other varieties. Their family had always taken the 'lutte raisonnée' approach to farming which means 'the reasoned struggle' and refers to the intention of using chemicals less often and less aggressively than conventional growers but in 2011, Cyrille and Sylvaine took on the task of converting their estate to organics and as of 2021 all their plots have been certified!
The Pegase blanc is a fresh and zesty sauvignon blanc grown on gravel and silt on granitic bedrock. The grapes had a delicate pressing and the juice was fermented at low temperatures to maintain fresher aromatics before being aged for the first few months on the lees prior to racking. Bottled with a little sulphur in early spring 2024.
