Deborah and Paul Old, Project 108, Cabirou, Languedoc, France

Paul Old is an ex-dancer who fell in love with Corbieres, particularly the potential of old vine Carignan, retrained as a winemaker when his body "began to fall apart" and started Les Clos Perdus back in 2003. Project 108 is Paul's 'zero zero' side project. 

The Cabirou is 90% Muscat and 10% Grenache Gris from the same plot of north facing slopes high in the hills of Corbieres where the grapes are hand harvested in the early hour. Half of the grapes are de-stemmed and the rest left whole bunch for balance of extraction and freshness and then macerated on the skins for ten days and basket pressed back to steel where it's aged on the lees with daily battonage during fermentation and aging before bottling without any fining, filtration or any additions.

Ripe and bruising stone-fruit with a herbal lift. A very classy orange indeed!
