Raised in Australia, Daniel Ramos or Kapi to his friends returned to his Spanish motherland and has found a home making wines high in the Gredos mountains just outside Madrid. He works mostly with old bush vines of Albillo Real and Garnacha, making wines with minimal intervention despite hating the term yet and achieving great expressions of the Gredos.
His blanco is made with an ancient variety called Jaen blanco from high altitude vines, fermented whole bunch on the skins for 39 days, foot trodden and aged mostly in stainless steel to retain youthful aromatics, but with a single oak barrel to add a little complexity. This is a richer, fuller bodied and textural orange with great orchard flavours with some sweet and floral notes. A very gastronomic wine, but equally great on its own.
