The Donati family have been growing wine in the Parma region since the 1930's, now third generation wine producers they follow biodynamic principles to bring us this little natural wonder.
They use severe pruning on their 11ha estate which leads to low yields and a concentrated punch, maceration on the skins to bring a richness in body and colour with continual pumping over and completely natural fermentation.
You'll find this wine is frothy rather than fizzy and rich in dark cherry, black plum and strawberries as well as plenty of tannins.Producer - Donati Camillo
