Gavin Patterson had a dream to have his own winery on rocky ground, he found his dream in South Africa at Hemel-en-Aarde and has created award winning Chardonnays and Pinot Noirs there. 

The Pinot Noir used in Gonzo are the last fruit of the harvest, they then spend 6 months in Italian Amphorae before being steeped with marc and spending 3 years in a 3 tier solera system.
