The Languedoc is thought to be a warm mediterranean region, yet the 6 hectares of vines at Chateau Coupe-Roses are grown at the highest point of the Cesse Canyon in Petit Causse at 250-400 metres above sea level which benefit from cool nights and long growing seasons. Owned by the Frissant family, Françoise and Pascal Frissant began their venture in the Minervois in 2008. Their vineyards are certified organic and are framed by biodynamic practices with use of cover crops and organic composts to create a balanced ecosystem. In 2016 their son Mathias took over as cellar master after finishing his enology studies and brought in a more hands off approach and the use of wild yeasts.
Aromatic mediterranean white with aromas of anise, orange blossom and peach, zesty citrus on the palate and a fresh mineral finish.
(This wine used to be labelled Château Coupe-Roses, Champ du Roy, but from the 2024 vintage it is called Éclat de Coupe Roses. The word Château had to be removed from the label as they left the AOC. Rules, hey.)
