Manchuela is rapidly becoming one of our favourite regions in Spain. The altitude refreshes the heat in a way that other regions cannot match, it has some great local grape varieties and it’s also escaped much attention so the wines are still remarkable value for money. This is made from Bobal, a grape that retains freshness and acidity in even very arid and warm climates. It’s grown by Juan Antonio Ponce, the magician of Manchuela, a champion of organic and biodynamic viticulture. Whole bunches are put into large oak fermenters, foot trodden and fermentation uses just the naturally occurring yeasts. Post fermentation it is kept in a variety of neutral French oak barrels for around seven months. The palate is ripe and plummy with a structured, savoury edge. Drink with paella, slow cooked dishes with lots of paprika.
