This is unfortified Palomino from Ramiro Ibanez of Cota 45, taken from five different plots across Miraflores Alta and Miraflores Baja, grown on 80+ year old vines. It's fresh, saline and delicate with a gentle trace of its time under flor. Expect notes of apricot, quince, baked apple and dough alongside smokey, savoury tones and a long finish.
