Didier and Sylvain are situated to the north of the town and have some of the best vineyards in the area, add to that the fact they are farming organically while also practising aspects biodynamically they are really getting the best from that Kimmeridgean soil and those Chardonnay grapes.

The grapes are hand harvested before being gently pressed. Fermentation is slow and the temperature is controlled in stainless steel tanks while the juice sits on the fine lees which is moved regularly for the first 6 months. This wine goes through no oak treatment and so the fresh citrus and mineralogy isn't hidden.
