Aphros is the project of Vasco Croft, a fomer Lisbon architect who has become one of the pioneers of biodynamic winemaking in Portugal. The estate spreads over nearly 20 hectares of land and forests, six of which are vineyards and four are chestnuts orchards. The Aphros wines are made in the traditional fashion without intervention in their medieval cellar which is without electricity. They have six Portuguese amphorae (talhas), some as old as 120 years old. They say 'Dispensing with electric power and machines, we allow ourselves the joys of moving our bodies and hearts together as grapes are transformed into wine'
The grapes are destemmed and left in amphora to ferment naturally before undergoing malolactic. It's packed full of citrus and flowers with a mineral backbone and mouthwatering acidity. Great with sushi.
