Upon the death of his father, George Wolski was moved to leave his job as a telecom CEO and reclaim his family's legacy of winemaking. His grandfather kept a cellar with three qvevri for personal consumption as the commercial production of wine was prohibited during the soviet era. George now has 60 qvevri, most of which are found beneath his home in Tiblisi and several vineyards around the foothills of the Caucasus mountains.
100% Saperavi, hand harvested and carefully sorted before the grapes are crushed and moved into stainless steel for fermentation. It undergoes seven days of maceration (the longest of any of his wines) with fermentation lasting up to three weeks with regular pumpovers. The wine is then moved to 1000-1200L qvevri for 30 months before bottling without any additions of SO2 or any fining or filtration
