Upon the death of his father, George Wolski was moved to leave his job as a telecom CEO and reclaim his family's legacy of winemaking. His grandfather kept a cellar with three qvevri for personal consumption as the commercial production of wine was prohibited during the soviet era. George now has 60 qvevri, most of which are found beneath his home in Tiblisi as well as ten hectares of vineyards around the foothills of the Caucasus mountains.
Kisi is one of Georgia's many indigenous grapes, it has a thick skin which brings high levels of tannin and with just five days of skin contact and some regular pump overs it produces a grippy and rich full bodied orange. Fermentation takes place in stainless steel for careful monitoring with controlled temperature before 18 months ageing in qvevri with zero additions of SO2 and bottled without fining or filtration.
