Alvarez y Diez were the first to concentrate the indigenous Verdejo and Sauvignon Blanc, producing a crisp, herbaceous style of wine. Alvarez harvested newer plantings at night by machine whilst the old vines are all hand harvested, 

Cold maceration over eight hours; controlled, cold-fermentation in stainless steel, at a maximum of 14º C for 15 days. The wine is gently clarified and stabilised before bottling.

Think stunning green-fruit aromas subtle bursts of vibrant citrus fruits. This wine is wonderfully fresh, and sits perfectly alongside chicken dishes and fresh crisp salads.
