Alice & Olivier De Moor have been at the forefront of the natural wine movement in Chablis for decades and now they have manage their plots in Chablis and Auxerre.
They're the real dream team, the power couple, both ecologists and graduates of the Dijon Enological school and experts in their own right, and yet equally share the decisions when it comes to making their wines. Olivier is predominantly in the vineyard and Alice in the winery
Vendangeur Masqué translates 'masked harvester' and is Chardonnay from sourced fruit from organic parcels, however once the grapes hit the De Moor winery then all processes follow Alice and Olivier's techniques. All grapes are picked by hand, destemmed and gently pressed before spontaneous fermentation occurs with indigenous yeasts. The wine then goes through a malolactic fermentation before raging on the lees in enamel lined stainless steel and old oak for uptown a year.
Because of the ultra rare unicorn wine status we shall be limiting sales to only 1 bottle per customer... Grab it while you can!
