Alice & Olivier De Moor have been at the forefront of the natural wine movement for decades , making wines on their vineyards in Chablis and Auxerre that set the bar high.

Both Alice and Olivier are ecologists and graduates of the Dijon oenological school and experts in their own right. They share the decisions when it comes to making their wines equally, though Olivier is predominantly in the vineyard and Alice in the winery.

This wine is made from Aligoté grapes grown on a parcel named 'Champagne', a north westerly facing slope with clay rich soil sitting on kimmerdigean lime stone. All grapes are picked by hand, gently destemmed and pressed before a spontaneous fermentation with native yeasts. Full malolactic fermentation follows before the wine is aged on lees in stainless steel for up to a year.
