We met one of the Artisan Vignerons de Naoussa team recently, a winery in the mountains of northern Greece, and tasted their amazing orange (or aka a skin macerated white) made from a blend of Assyrtiko and Roditis, co-fermented on skins for 20-25 days.
While fermenting white grapes on skins might be a trendy new thing to do in some parts, they explained that for them it is a way of making wine that never went away.
