Envínate (aka wine-yourself) is the brainchild of Laura Ramos, Jose Martínez, Roberto Santana and Alfonso Torrente, four friends who met while studying oenology at the University of Miguel Hernández in Alicante. They focus on exploring the ancient, Atlantic-influenced terruños of Ribeira Sacra, The Canary Islands and Almansa. Their philosophy is simple: let each parcel fully express itself through traditional farming and wine-making methods.
The Migan is one of Roberto Santana's projects, taken from two parcels (La Habanera and San Antonio) in the Orotava Valley on the northwestern coast of Tenerife where Listan Negro is grown on 100+ year old vines. The soil is worked by hand without any chemicals and grapes are hand picked. Each parcel is vinified separately with all of the grapes from La Habanera being fermented with whole bunch clusters for 12 days were as only 20% of San Antonio's fruit are whole bunch. Both are foot trodden.
